Mango Avocado Salad


A perfect dish for a hot summer day (well, I’m still allowed to dream right?), and a lot more exciting than your usual Cesar salad. This recipe will feed 2 people as a main dish, and four people as a starter.

Here’s what you need:


– one mango

– one ripe avocado

– juice of 1/2 lime

– 50 g rocket salad

– 200 g buffalo mozzarella (if you don’t live in Europe and buffalo mozzarella is outrageously expensive (I feel you, Capetonians), normal mozzarella will suffice as long as it’s the fresh one in water)

– 50 g pine nuts

– 100 ml orange juice

– 1/2 chilli

– 1 tbsp (as always real tablespoons, not American ones) of honey

– 3 tbsp olive oil

– salt and pepper

Here’s what you do:

– remove the chilli seeds and chop the chilli roughly (if you have no problem with spiciness you can chop it into fine pieces, as it will look nicer. However, if you chop it roughly the pieces are easier to remove)

– boil the orange juice down to half, add honey, olive oil, salt, pepper and chilli and mix to get a nice vinaigrette. Let it sit for a while. (you will have to mix it again later as the oil and the orange juice will seperate again)


– roast the pine nuts until brown (be careful not to burn them!)


– wash the rocket and set aside

– cut the avocado into dices. A friend taught me that it’s way easier and a lot less messy if you cut the avo while it’s still in the peel, like this:


this will of course only work if your avo is nice and ripe

– pour lime juice over the avocado

– cut mango and buffalo mozzarella into dices and mix with the avo


– mix the vinaigrette again and pour over the rocket. Add the mango mix and mix thoroughly


– serve sprinkled with pine nuts
